We will begin by initiating a few chemical reactions to start the process. We will review the steps of cheese-making, learn why artisan cheeses are more complex in taste and variety, and sample New England artisanal cheeses along with accompaniments from New England Artisan. Individual teams will then make a variety of cheeses such as ricotta, queso blanco, and panir. Together we will try our hand at stretching mozzarella balls.
