Culinary Adventures/Personal Protection
Coolest Holiday Cookies
Come learn how to make your own homemade theme cookies. Decorate them with
a cool stained glass candy look, goodies and royal icing. Take home recipes and
ideas with the knowledge of the newest trend in cookie decorating. These cookies
have breath taking colors that are perfect for a gift, party or to just wow your guests.
The supply fee of $20 (cash or check payable to instructor) due on the first day of
class, will cover all the supplies needed all you have to do is just show up and enjoy.
Enrollment limited to 9. This course takes place at the Middlesex Meeting
House, 294 Concord Road, Billerica, MA. All participants must register by

Southern BBQ
Real barbecue is wood-smoked--we're not talking burgers and hotdogs. Blue
Ribbon BBQ chef David Schaefer will teach the essentials for making the real
thing. We'll learn about the right cuts of meat, sauces, and seasonings to prepare
world class, fall-off-the-bone barbecue. We'll sample Memphis-style spareribs,
Carolina-style pulled pork, and Texas beef brisket. Learn how to prepare these
meats and some of the side dishes that complement them. We'll learn how to make
marinades, rubs, brines, and sauces, and find out which ingredients are used for
long, slow barbecue vs. high-temp grilling. This class will be mostly lecture and
demo with some hands-on practice. (Real barbecue takes many hours to prepare,
so we won't complete the entire process.) Handouts will be provided. Price includes
cost of food. This class will take place at Minuteman Technical School,

Tapas
These small plates offer a big culinary experience so unique that they have left their
mark on the dining experience, with tapas bars and tapas parties! With a wide array
of flavors and ingredients, these recipes are fun to create, easy to execute and leave
you with a social experience full of culture and flavor. Marinated olives, prepared
several ways start us off. Sautéed mushrooms and en tapenade are to follow. We
will dine on flavorful beef skewers along with a shrimp dish that includes white
beans. A delicately grilled bread and classic patatas bravas will perfectly round out
our tapas experience! $25 food fee due to the instructor the night of the class. This

Not Your Average Pasta Sauce
Pasta sauce is so much more than your typical tomato based sauce and the rich
and creamy Alfredo sauce. Roasted garlic and a balsamic reduction paired with a
rustic bread will get us started. Spinach salad with a citrus vinaigrette is a great
light new salad option. Pasta with chic peas, pancetta, sage and rosemary is being
served up, alongside an orrenchette with broccoli rabe with a hint of rosemary.
What about an egg noodle with a roasted butternut squash butter sauce with a hint

Italy has given the culinary world a vast array of food & cooking methods/
techniques that have developed into a true passion for the good life. From the rich
and hearty flavors of prosciutto di parma, parmigianino-reggiano, balsamic and
olive oils good enough to drink to the most beloved comfort foods of pasta tossed in
an fresh tomato sauce, grilled bread with home dipping oils/sauces, these recipes
will become part of your Italian tradition. Marinated breast of chicken rubbed with
Italian herbs, a saute of green beans, homemade infused oils and cheeses of the
regions will make for a feast. To the good life, salute! $40 food fee due to instructor

Personal Protection
SMART Defense Training
is an acronym for Survival Mindset Adrenal Response Training.
SMART Defense shows you how to deal with the adrenaline rush
you get when being attacked. You will learn what works and what doesn't
work in a real attack. You will be taught easy to learn gross motor skills that
you will be able to perform under stress to get away safely. We don't just
concentrate on the physical attacks but the mental as well. We help you
develop the proper mindset to survive and get away safely. By developing
the proper mindset and teaching movements based on natural instincts you
become more confident in yourself and your ability to get away. (4 hours).
