Youth Programming/Culinary Adventures
Etiquette For Middle Schoolers
Etiquette for Middle Schoolers is a 2-part program. Level One is offered in fall 2017
and Level Two in winter 2018. The levels of the program build upon each other, but
can also be taken independently. Each 8-week level focuses on the development
of a different set of skills. Middle schoolers face challenging social and societal
issues, and we expect them to behave responsibly and maturely despite their
tender age. This 2-Level Etiquette Program is designed to raise awareness about
peer pressure, improve communication with peers and adults, and learn more about
the common sense policies and actions an individual can take to feel more secure
in social situations. Through group discussion and role playing, we will strengthen
your child's communication, presentation, and social skills. Furthermore, we will
empower and inspire students by giving them the knowledge on proper manners at
home, at school, and in their social lives. The last class is held at a local upscale
restaurant where students practice and perfect their newly acquired skills while
participating in a four-course meal.
New addition for 2017: Both Level One and Two will include a dance class taught
by Milan Locic, Professional Ballroom Instructor with 25+ years' experience. In

Etiquette For Young Adults
Etiquette for Young Adults is a 2-part program. Level One is offered in fall 2017

of a different set of skills. Today's high schoolers are juggling hectic schedules.
From earning scholarships to excelling in sports or preforming arts, high schoolers
are accomplishing amazing things. However, face-to-face communication outside
of their social circle may not come easily. This 2-part program will discuss what it
means to be a good friend and a good partner, and will provide specific rules and
actions a young adult can take to feel more secure in day-to-day life situations.
Furthermore, we will teach students proper interview etiquette and positive
communication preparing students for job and college interviews. Students will
learn leadership and teamwork skills, and how to feel comfortable when speaking
in front of the audience. The last class is held at a local upscale restaurant where
students practice and perfect their newly acquired skills while participating in a
four-course meal.

Culinary Adventures
Basic French Cuisine
Learn the basics of French cuisine while making Poulet saute' avec
tomate concasse et champignons or Sauteed chicken with tomato
concasse and mushrooms. How to saute' properly, how to create and use
tomato concasse, how to make and use a demi-glace and how to create a pan
reduction will all be covered. Understanding the basics will set you off to a
creative pursuit of culinary delights. Cuisine Bienvenue a' Francaise! This
class uses the Industrial Kitchen at the United Teen Equality Center
(UTEC) located at 35 Warren Street, Lowell, MA. (3 hours) $69

Basic Italian Cuisine
What makes a good Italian sauce? How do meats effect the
flavor profile of a sauce? How can you vary the flavor profile with
ingredients, herbs and spices? What are the variations on a basic sauce?
Learn the basics of creating a solid, flavorful sauce that will have you saying
"better than any restaurant or supermarket sauce I have ever tasted". We
will go over the basic ingredients and talk about variations and then you
can proceed to create your sauce. We will also put together meatballs in
various ways and add sausage as well. If you prefer a vegetarian approach
we can talk about meatless sauces. Adding pasta to the discussion in terms
of cooking time, using the starch water for flavor, par-cooking and holding
will expand your abilities to save time and avoid hassles. Benvenuto a

Trick or Treat Cake Decorating
Are you having or going to a Halloween party, well in this class you will be making
a spooky dessert ready for its film debut. You will learn how to make a Halloween
themed 3-Dimentional cake. Learn the basic ins and outs of working with fondant
for that realistic look everyone's going crazy for. The class will cover dying, rolling
out and laying fondant properly on your 3D cakes, complete with fondant accents.
The materials fee of $15 (cash or check payable to the instructor) due on the first
day, will cover all the supplies needed for the class. Enrollment limited to 9. This
course takes place at the Middlesex Meeting House, 294 Concord Road,
Billerica, MA. All participants must register by or before Friday, October

Intro to Cake Decorating
Learn the art of cake decorating in this introduction course. Everything from frosting
a cake perfectly smooth to piping intricate borders and making frosting roses will
be covered. Each student will take home a fully decorated cake. Maybe one day
you could be just like Food Networks and TLC's top cake decorators. Everything
is provided for in the cost of the supply fee of $20 (cash or check payable to the
