Note: All food and fine dining courses are not eligible for waivers or vouchers. Unless otherwise noted, classes are off-campus. Students must be at least 18 years of age unless otherwise noted.

Introduction to Catering
Learn the basics of the catering business including principles of menu planning and table settings for buffets and receptions. Students will learn the proper preparation of a variety of "finger foods", highlighted by individual demonstrations and setups for each class. Food protection and safety will be emphasized, and the means for determining food and labor costs will be explored. (18 hours) $299

Wine Tasting 101
Learn the basics of red and white wines in this two-session exploration which focuses on the senses of vision, smell and taste to identify the range of qualities in your sample wines. Learn to read the labels, how to store your wine, styles and food pairings.   This class is hosted by Ricardo's Cafe and Trattoria located at 110 Gorham Street, Lowell, Massachusetts. Love Potions
Get in the mood for Valentines Day with Bar Manager Kim Mello and Chef Paul Dubuque as they prepare and pair various popular food and cocktails reputed to enhance amorous desires!  This "PG 13" class will include tastings. 21 and older. Love and Cake
Nothing says I love you more than a Valentines Day cake.  Give your sweetie a romantic treat in this fun 3-dimentional fondant cake decorating class. No experience is needed; just have fun learning the hottest trend in cake decorating. A supply fee of $20 should be paid to the instructor at the first class and everyone goes home with a fully decorated cake. This course takes place at the Middlesex Meetinghouse, 294 Concord Rd., Billerica, MA. (3 hours)  $35

Valentine’s Dinner
Enjoy Valentine’s day in an intimate setting this year. Ricardo’s Trattoria, normally closed on Mondays, is opening solely for this opportunity. Enjoy a five-course, pre-fixed Valentine’s Day menu priced at $75 per person, not including tip. In addition, sample 5 different wines that compliment your meal. Cooking 101
This course is designed for the home cook who wants to enhance their skills.  We will begin with knife skills so that you will be able to select the best knife for the recipe at hand. We will work with various meats in order to experience the best method to create recipe cuts. Examples of this would be proper chicken breast cuts for a recipe.  Proper knife sharpening and the safest way to handle knives will be covered.  Finally, we will cover appropriate pots, pans and other cooking tools. Cupcakes are one of the hottest trends in the dessert industry right now.
